Operation of Steam Generator
& Oven Insert

Preheat Stone for 45 minutes to 1 hour before baking bread.
Fill steam generator using the fill cup, secure lid and
install nozzle tip. You will only use a small amount of the water in the
steam generator so it is not necessary to completely fill the steam
generator. Plug in steam generator 5 minutes before use.

Load bread loaves onto pre-heated baking stone. We suggest several ways
to accomplish this... |

1. Form loaves on a square of parchment paper. |
|
2. Use a pizza peel or the bottom of a ½ size baking sheet to slide
loaves onto baking stone.

3. Place steam chamber lid over loaves of bread. |
|
4. Inject steam from steam generator through hole into steam chamber for
10-20 seconds. We find that the process is fairly tolerant of a wide range
of steam injection times. |

It is possible, though to over steam the loaves. The loaves will puff up, and then collapse once you remove the
cover if you over steam them. |
|
Angle the injector nozzle so that the steam directions is along the
top of the lid.
Do not angle the injector nozzle down towards the surface of the
bread or you can change the shape of one of your loaves.

| 5. After 6-9 minutes, remove steam chamber lid from oven. |

Safety Note

The steam
generator produces a high pressure jet of steam at and above 212F. This
jet of steam will scald you instantly if directed onto the skin. Never
point the steam generator at a person. Never open the steam generator when
the vessel is under pressure. Bleed off all pressure in the steam
generator by depressing the trigger before loosening the lid. Refer to
steam generator manual.
